A dicotyledonous plant, sweet potato belongs to Convolvulaceae family. Sweet potatoes manly come in two varieties ‘“ white sweet potato and orange sweet potato. These two are differentiated because of the white and the orange colours of the skin.
Apart from the difference in the colour of the skin, they also have many specific differences. But most of the people are unaware of the difference between White and orange sweet potato.
One of the main differences that can be seen is in the sweetness. The white potato is considered to be sweeter than the orange sweet potato. Another difference can be seen in presence of beta-carotene, which helps in producing Vitamin A in the body. Sweet potato is known to contain more beta-carotene than the fleshy vegetables. When comparing the two sweet potatoes, the orange sweet potato is known to contain more beta-carotene than the white sweet potato.
When talking of the orange sweet potatoes, some people refer this sweet potato to Yam. People in the US generally prefer the name Yam to orange sweet potato. The name Yam was given to differentiate it from the white sweet potato.

The US labels sweet potatos as Yams and yams as sweet potatos. There is a white sweet potato that is called the cuban boniato. It has a Brown covering, doesnt have the mushiness accompanied with orange sweet potato and is a firmer vegetable.
These are traditioanlly fried and served with a sprinkle of salt, since the white sweet potato is dry while being slightly sweet. The salt allows for the product to be swallowed easier.
They are also mashed and seerved, but they are not orange sweet potatoes, they are white on the inside and a dark color on the outside. Much larger and pointy at both end with a fat body. Unlike the orange sweet potato that tends to look like a potato.
You need to do some research about white sweet potatoes, yams and orange sweet potatoes before you post an article full of misinformation.
I think you missed the point. This article isn’t talking about yams at all; it’s discussing white sweet potatoes and orange sweet potatoes. Americans refer to orange sweet potatoes as “yams” (which this article mentions) even though orange sweet potatoes are not yams. True yams are not discussed at all in this article.

The way we always understood it was that you bake a sweet potato and you candy a yam well IM 51 years old and today.I had my first white sweet potato and was very disappointed .The flavor was very mild with a hint of wild honey and boy was it dry it sucked up 2 pads of butter and never looked back no wonder grandma never served them
Yes if they are left in ground to long they are dry, but in Bermuda I never new off orange sweet potatoes or yams, I came up on the white ones, we use them to make sweet potato pudding, our family ate them with salt fish stews. But living in the USA for 57 years I love them all, and there is a driffents between orange yams and orange sweet potato. Me I find the yam a little softer.
A better way to cook it. Cut up white sweet potatoe. Put in pot . Cover w water . Boil. For about 10 15 min covered. Use a masher and mash using a small ant of milk. I use them instead of pasta w any tomatoe based meal. So good.
I never heard of, a white sweet potato until today, and have never seen one. I only knew the difference between yams and sweet potatoes was that one of them has a sort of stringy flesh when cooked, the other does not; one of them has a more orange flesh than the other (paler), and one is sort of pointy at the ends, the other is rounder…not sure which is which, just these noted differences.
I’m really fat, and it’s all because of yams, or is it sweet potatos, eh, who cares, same thing right? Actually they have really great nutritional value, and I’m not fat at all.

The supermarket around where I live in Colorado all mislabel orange sweet potato as “yam” …. My mom only made the orange sweet potato growing up, it’s the only one I know about. Everytime I went looking for orange sweet potato I would leave the store disappointed and buy the white ones because they are labelled “sweet potato”.. I always passed over the the ones I actually wanted because they are labelled “yam” and I did not want yams… It’s not until recently, I realize what they are labelling as “yam” is ACTUALLY an orange sweet potato… The article is very informative. Also the fact the orange sweet potato is higher in beta carotene is a good reason to select the orange ones over the white ones..

Has anyone known slips grown from a yellow/orange sweet potato to produce the white variety?
I received a good leafy slip which a family member who said they had grown from a yellow/orange variety which when planted in my garden has produced a white variety. I can supply a photo of the vegetable harvested.
I can’t be sure the family member was not mistaken so would be interested to know whether soil or the elements in it can bring about such a change?
