Difference Between Dark and Light Brown Sugar

Dark vs Light Brown Sugar

Brown sugar is sucrose sugar that comes in a distinctive brown color. It is molasses that gives the characteristic brown color to this sucrose sugar. Brown sugar comes refined or partially refined. Brown sugar is available in light and dark colors.

The difference between dark brown sugar and light brown sugar is mainly in the presence of the molasses. Light brown sugar contains 3.5 per cent of molasses, and dark brown sugar contains about 6.5 per cent molasses. Dark brown sugar comes with more molasses flavor as it has more molasses content in it. Dark brown sugar has an intense flavor whereas light brown sugar comes in a delicate and light flavor.

Both dark brown sugar and light brown sugar are used in baked foods. However, when dark brown sugar is used, it makes cookies chewier as it contains more moisture. As dark brown sugar contains moisture, foods baked using this sugar take a longer time than foods made of light brown sugar. Unlike the light brown sugar, the dark brown sugar gives a deep color to baked foods.

When comparing the two brown sugars, the light one is more delicate and caramel flavored. On the other hand, dark brown sugar is more robust. Light brown sugar is more commonly used than dark brown sugar. While light brown sugar is used for making butterscotch, dark brown sugar is used more for making baked beans and gingerbread.
