Truffle oil is considered to be an alternative to real truffles. Real truffles are very expensive and as such these oils are more used. These oils are mainly made from the base of olive oil, which are flavoured. Truffle oil comes in two forms — white and black truffle oil. The one that is derived from white truffle are the white truffle oil and that comes from black truffle are the black truffle oil.
Though both the white and black truffle oil are characterised by its mushroom flavours, they are quite different in some respects.
When talking of Black Truffles, it is named after the truffles found in France where they grow amidst the roots of oaks. When comparing the flavour, the black truffle has a strong flavour than any other truffle. These truffles have a more earthy flavour. The black truffle is manly used to add flavour sauces, liver pates, and savory pastries.
White Truffles are known to grow more in northern Italy, mainly in the Piedmont region. When compared to black truffle, the white truffle has a delicate taste and has an aroma of garlic. These truffles are eaten raw and are used in risottos, pastas, fondues, egg dishes, tomato dishes, risottos and mozzarella cheese.
White and black truffle oil is used for different recipes. Unlike the white truffle, the white ones are always cooked. The strong taste of the black truffles makes it important to be added to sauces, meats and casseroles.
White truffles are not cooked and also have a lighter taste. As such, the white truffle oil is added once the cooking is finished.
