People are now more aware of white and dark chicken. They know that dark chicken should not be taken too much. They know that dark chicken is bad for the health and white chicken is good. However, most of the people are unaware of the difference between white and dark chicken.
A chicken has both white and dark meat. When comparing the white and the dark chicken, the latter one comes in darker colour. It is not just in the colour that the two chickens differ but they differ in many other things.
One of the differences that can be seen between the two is that the white chicken comes dry whereas the dark chicken comes juicy. It is also seen that the dark chicken has more fat content than the white chicken.
The meat in the breast and the wings are normally called white meat and the meat in the thighs and legs are known as dark meat. When comparing the muscles in the white chicken and the dark chicken, one can come across differences. The muscles in the dark meat get their energy basically from fat. The dark colour is got because of the presence of two proteins that are involved in the process of converting fat into energy.
The White chicken gets its energy from glycogen, which is a polysaccharide of glucose. This glycogen is stored in the liver and is broken down into glucose when the white muscles need energy.
Now comparing the flavour, the dark chicken has a stronger flavour. It is said that this smell is because of the activity of various chemicals, fats and proteins in the muscle tissues.
In case of cooking, the white chicken can be cooked faster. This is because white chicken is tender and thinner when compared to dark chicken.
