White and dark balsamic vinegar are Italian vinegars. The very name itself shows that they are two different brands of vinegar ‘“ one is white and the other one is dark.

When talking of White Balsamic Vinegar, it has a sweet, subtle flavour. Coming in clean colour, the white balsamic vinegar is served with all light coloured foods. Unlike the dark balsamic vinegar, the white balsamic vinegar does not discolour the foods. This vinegar is mainly used in marinades, in salad dressings and light coloured sauces.

The Dark Balsamic Vinegar is considered to be the real balsamic. The Dark Balsamic Vinegar is the most commonly used vinegar. Unlike White Balsamic Vinegar, the Dark Balsamic Vinegar has a tradition. It has been in use since Middle Ages. Some people even do not consider White Balsamic Vinegar as balsamic vinegar.

As the name suggests, the Dark Balsamic Vinegar comes in thick colours. Another difference that can be noticed between White and Dark Balsamic Vinegar is that the later one is more aged. It is said that some Dark Balsamic Vinegar has been aged for over 100 years. The White balsamic vinegar is aged for about one to 12 years.

Even in the price the two Italian vinegars have much difference. The Dark Balsamic Vinegar is priced higher than the White Balsamic Vinegar. It is years of aging that makes dark balsamic vinegar so expensive. In case of ageing, the dark balsamic vinegar is aged in charred barrels. On the other hand, the White balsamic vinegar

Is not aged in charred barrels.

When looking at the healthy aspects, the dark balsamic vinegar is healthier than White balsamic vinegar. It can also be seen that dark balsamic vinegar is a thicker vinegar.

  1. I have been to Modena (ER) Italy to study the heritage of balsamic vinegar of Modena. The article may be a little thin, other than a cursory stating of the obvious facts. ie. it’s dark, it’s thicker, it’s more expensive. What variety of grape used to make “white balsamic?” Or, for that matter what variety of grape is used in the dark balsamic? If some people do not consider white balsamic to even be balsamic, then what is the point of the article? Is the white made from grape must?
    I am no expert, but if you are going to give me an opinion, vs reality, as least make it believable.
