Sugar is the white granule that gives sweetness. However, in the market, there are many varieties of sugar like fruit sugar, white sugar, caster sugar and sanding sugar. In the market, one can come across sugars with large granules, small granules and even powdered granules.
Here let us look at white sugar and caster sugar. Caster sugar is also called superfine sugar in the United States. It is easy to make out a difference between white and caster sugar just by touch. The caster sugar comes finer when compared to white sugar. The caster sugar is much like a powder when compared to white sugar.
Unlike white sugar, caster sugar is milled more. Another thing that can be seen is that caster sugar dissolves more quickly than White sugar because of its fine nature.
It is very difficult to differentiate the granules in a caster sugar whereas it is easy to separate the granules in white sugar. The granules in caster sugar are very hard to see in naked eye whereas it is easier with white sugar.
Caster sugar gets the name from caster or castor, which is a container having small holes for segregating granules.
White sugar is refined sugar. White sugar is preferred more for sweetening drinks and baking as it has a neutral flavour. As caster sugar dissolves fast, it is used in beverages, especially in cold drinks. In cold drinks white sugar is a bit difficult to get dissolved that fast.
Caster sugar is also light, which makes it ideal for whipped desserts, sorbets, cakes, custards and cookies.
